The Oprah Show was playing in the background, as I sat at my kitchen table with a stack of cookbooks trying to gain some inspiration for dinner. I was on a quest to find something different for dinner that was reasonably simple to prepare, did not require a ton of ingredients, and was on the healthier side. Then I heard Oprah say, “I believe [it] may be the best turkey burger in the entire world.” I thought to myself, “Good turkey burgers? Is there such a thing?” Because they lack a significant amount of fat, I was under the impression that turkey burgers were dry and flavorless unless you added back a lot of “bad” stuff. Oprah brought Jeff O’Neill, the chef from Donald Trump’s private club Mar-a-Lago, on her show to prepare the burgers on stage. His turkey burgers looked juicy and had ingredients that were different from other burgers. I sped off to the market to pick up a few ingredients and zipped back home to test the recipe and to find out if Oprah’s praise for these burgers was deserved or not. They did not disappoint and they are among my daughter’s friends’ favorites when they come to visit.

Mar-a-Lago Turkey Burgers

Ingredients:

1/4 cup thinly sliced scallions

1/2 cup finely chopped celery

3 Granny Smith apples, peeled and diced

1/8 cup canola oil

4 pounds ground turkey breast

2 Tbsp. salt

1 Tbsp. black pepper

2 tsp. Tabasco® chipotle pepper sauce

1 lemon, juiced and grated zest

1/2 bunch parsley, finely chopped

1/4 cup Major Grey’s Chutney, pureed

Directions:

Sauté the scallions, celery and apples in the canola oil until tender. Let cool.

Place the ground turkey in a large mixing bowl. Add sautéed items and the remaining ingredients. Shape into eight 8-ounce burgers. Refrigerate for 2 hours.

Season the turkey burgers with salt and pepper. Place on a preheated, lightly oiled grill. Grill each side for 7 minutes until meat is thoroughly cooked. Let sit for 5 minutes.

Serves 8.

Linnell’s Notes: I never add the full 2 tablespoons of salt, however, my taste buds have adjusted to a lower sodium diet. Also, depending on how chunky the chutney is, sometimes I puree it and sometimes I don’t. I also play with the amounts of apple, celery and green onion. If I have a bit more than the required measurements leftover, such as a few slices of apple, half a celery stalk or a green onion, I go ahead and add them. The last time I made these I only had 2 pounds of ground turkey and I made at least six patties. My husband usually grills the burgers for 4-5 minutes on each side and not the 7 minutes mentioned in the instructions. Of course, this is all a function of how thick you make your patties.

There are always so many reasons to celebrate life, but this weekend is special. My youngest child celebrates her 21st birthday today and I feel so blessed that she has become such an extraordinary adult.  And when I count my blessings, I always include the amazing men in my family. Today’s post is dedicated especially to my dad and my husband, and to all the fathers who work hard, sacrifice a lot, and love beyond measure.

Menshealth.com has an article called “Abs Diet Super Bowls” that caught my attention because the ingredients listed in its “Honey, I Shrunk My Gut” bowl are similar to those I eat for breakfast every morning! Check out these recipes and please, no wise cracks about my gut!

#3 – Graduation Thank You Cards
I make my own thank you cards using photos that I take and card stock. Here’s an idea for graduation thank you cards: Print photos of the graduate or of some aspect of the graduation ceremony (hats thrown in the air, close up of the diploma, family photo at graduation, etc.) and using either double stick tape or glue that is photo safe, adhere it to a piece of 8.5″ x 5.5″ card stock folded in half. That would be a sheet of 8.5 ” x 11″ card stock cut in half. Personalizing the card with a photo makes the thank you card extra special for those who could not be there for the celebration or have not seen the graduate in a while. Envelopes can be purchased at any office supply or paper goods store.

#4 – You Peel Tomaaaato, I Peel Toooomato
To peel tomatoes (peaches, and plums, too):  Wash and remove any stickers. Gently remove the stem. With a paring knife, cut a small, shallow “x” on the bottom. Plunge the tomato into boiling water for about 15 – 25 seconds, then put it into a bowl of ice water to cool. After it’s completely cooled, wipe it dry and gently peel off the skin.

My garden is so lush and lovely right now and would be perfect, if not for the glaring exception of the fountain in the backyard. Thick, icky green was the only way to describe it yesterday. So what to do? Well, a little algaecide goes a long way or so I’ve just learned – now I have a fountain full of bubbles! It’s fun to look at, but I’m really concerned about little birds taking bubble baths in it. It’s time to use elbow grease instead of chemicals! Be kind to the earth.

Make someone’s life a little easier, a little better, perhaps a little happier, by performing a random act of kindness for them. Here are a just a few suggestions that I’ve not mentioned before on this blog:

*Call a soup kitchen to find out how many people they generally serve. Then offer to prepare and deliver muffins, salad, or dessert for one of their meals.

*Share a recipe.

*Tell someone you appreciate them.

*Park farther out, giving others the choice parking spots.

*Offer to return a shopping cart to the store for someone loading a car.

*After loading your groceries into the car, return your shopping cart.

*Invite someone new over for dinner.

*Invite a college/apartment-bound student over for a cooking lesson.

*Open the door for another person.

*Give your full attention and simply listen to someone.

*Pay a compliment at least once a day.

*Roll an elderly neighbor’s garbage cans back up the driveway at the end of trash pick-up day.

*Volunteer to drive a sick friend to his doctor’s appointment or to his chemo appointment.

*Donate blood.

#2 – Cutting Roses
What time of day is it best to cut roses from your garden? According to Rayford Clayton Reddell’s book A Year In The Life of a Rose, “Rosebushes begin drawing in moisture with the first hint of approaching dusk, and they hold it until the morning light gets strong. Since you want blooms with as much moisture in them as possible, cut either before midmorning or after midafternoon . . . . What you most want to avoid is cutting during midday, especially during hot weather, when blooms are limp.”

#3 – Reuse Those Plastic Storage Bags
Why waste plastic bags? As long as ziploc-type plastic storage bags can be washed out, I reuse them. Unless they contained something gross or raw, I wash them out in sudsy water, rinse them, and then let them air dry. The best way to air dry them is to open them and invert them over something like a bottle or a vase. I separate these used bags from the new ones and use them only for storing nonfood items. These used bags came in very handy during my recent trip to Greece; they held sundries, medicines, cosmetics, scarves, etc.

#4 – Unkind Food
According to the most recent issue of Nutrition Action, The Cheesecake Factory’s Chocolate Tower Truffle Cake ” . . . weighs in at three-quarters of a pound . . . Just 1,670 calories and 2-1/2 days’ worth of saturated fat (48 grams), nearly all of it from chocolate, sugar, cream, white flour, and butter.”

My husband receives the same Father’s Day gift every year, yet he never complains about it and he always delights in it. More impressively, he thinks I planned his gift pretty darn well. So here’s what his perennial gift is – it’s our daughter! She was born on Father’s Day over two decades ago and ever since then, I just haven’t been able to top that gift!

Since my hubby already knows what his gift is and since Father’s Day is just a few weeks away, I’ve started thinking about what items I’m going to serve him to make his brunch extra special. Wanting to serve him something healthy, yet tasty, I searched my infamous stacks of clippings and came across this Martha Stewart recipe for Quinoa Muffins. Interestingly, this recipe calls for using whole cooked quinoa seeds instead of quinoa flour.

Quinoa, as you will recall from my previous Quinoa Shrimp Salad post, is a tiny Peruvian seed that is a complete food and contains a balanced set of amino acids. It is also gluten-free (however, this muffin recipe is not). It’s a staple in my pantry and I continue to search for interesting quinoa recipes. Don’t forget to rinse quinoa with clear running water prior to cooking it to remove the bitter protective coating.

Martha Stewart’s Quinoa Muffins:

Ingredients
* 1 cup quinoa, rinsed
* 1/4 cup vegetable oil, such as safflower, plus more for pan
* 2 cups all-purpose flour, plus more for pan
* 3/4 cup packed dark-brown sugar
* 1 1/2 teaspoons baking powder
* 1 teaspoon salt
* 1/2 cup raisins**
* 3/4 cup whole milk
* 1 large egg
* 1 teaspoon pure vanilla extract

**I used 1/2 cup of mixed dried fruit: blueberries, currants, and orange-flavored craisins.

Directions
1. Preheat oven to 350 degrees. In a medium saucepan, bring quinoa and 1 cup water to a boil. Reduce to a simmer; cover, and cook until water has been absorbed and quinoa is tender, 11 to 13 minutes.
2. Meanwhile, brush a standard 12-cup muffin pan with oil; dust with flour, tapping out excess. In a medium bowl, whisk together flour, sugar, baking powder, salt, raisins, and 2 cups cooked quinoa; reserve any leftover quinoa for another use.
3. In a small bowl, whisk together oil, milk, egg, and vanilla. Add milk mixture to flour mixture, and stir just until combined; divide batter among prepared muffin cups.
4. Bake until toothpick inserted into the center of a muffin comes out clean, 25 to 30 minutes. Cool muffins in pan, 5 minutes; transfer to a wire rack to cool completely. Store in an airtight container up to 5 days.

Makes 12.

Linnell’s Note: Despite their chicken pox appearance, these muffins were surprisingly crunchy on the outside and very moist on the inside. It’s a good basic recipe that lends itself to many possible variations. I will be making these again and will try substituting organic blue agave sweetener for the sugar, a banana for the oil, and will add some cinnamon and nutmeg. I’ll let you know how my experiments turn out. Oh, and if I’m lucky and my husband is even luckier, we’ll get our food-loving second son to make his fabulous Crab Benedict for Father’s Day brunch!

Pepto-Bismol? Check. Ace bandage? Check. This is me mentally going through the contents of my traveling medicine bag. Whenever I travel long distances, I grab my plastic travel bag that contains medications and first aid items. I’ve learned that when traveling you can’t always buy medications when you need them. For the most part, my medicine bag is ready to go at a moment’s notice; I do, however, review expiration dates before I leave and replace any items that have expired. Most of the time the contents of my medicine bag does not change, but it may vary depending on my destination.

Obviously I’m a detail-oriented person, but I’ve learned a lot about packing from my mother. Once when I was preparing for a trip to China, my mother told me, “Throw in some strapping tape and an Ace bandage.” I mumbled to myself, “Why do I need those things?” Being a dutiful daughter, I threw them into my bag. Traveling in China during the 1980s was restrictive. You could not deviate from the schedule and most certainly could not leave the tour group to run to the nearest drugstore to make a purchase. So sure enough when someone in my tour group fell down and sprained her ankle, I stuck my hand up in the air proudly and said, “I have an Ace bandage!” And later during the tour when someone’s suitcase tore, I volunteered, “I have strapping tape, if you need it.” Two out of two – never again have I doubted my mom’s packing advice!

While traveling with my children over the years, I’ve learned that unexpected issues can arise and it’s always better to be prepared. Because of this I’ve had to add items to my traveling medicine bag. I’ll never forget this experience: It was a lovely day in Hawaii and my husband, children, and I were enjoying a day out on the beach. My oldest son was building a sand castle when he stepped on a bee and got stung underneath his big toe. I grabbed my room key, which was a plastic credit card-type, and gently scraped across his skin to remove the stinger. As his foot began to swell, I reached for a chilled can of soda from our day pack and held it to the swelling. Once back in our hotel room, I applied hydrocortisone cream to the area and gave him a Benadryl tablet. Since we were in Hawaii, we could have easily run out to a drugstore, but having these items on hand, I was able to attend to his swollen foot without delay and prevented his symptoms from getting worse.

Like prescribed medications, I keep this medicine bag in my carry on luggage. To make the traveling medicine bag lighter, more organized, and more compact, I remove all medicine from their boxes. Then I dismantle the boxes until they are flat and make photocopies of the important information on them. I cut out the photocopied information and put them into sandwich-sized Ziploc bags along with the medication. Blister packs of medication work well, but If you have bulky pill bottles or Costco-sized containers, pour some pills into labeled (medication name, # of mg/per pill, dose, expiration date) small, jewelry-sized plastic bags before placing them into the sandwich bags with the instruction sheets. All sandwich-sized Ziploc bags then get placed into the traveling medicine bag. I probably would have made a great Girl Scout, because I am always prepared!

Quick, how many words can you think of that contain the word “size”? I’ll get you started with capsize, apotheosize, emphasize, downsize, supersized, fantasize, hypothesize, oversized, sizeably, synthesized . . . Okay you take over!

#1 – Calorie Counter
At Calorie Lab you can type in almost any food and it will pull up different calorie counts for that item, depending on restaurant or manufacturer. Alternatively, you can look up a restaurant and search the menu for calorie counts. For example, I typed in lasagna and it pulled up a long list of frozen and restaurant prepared lasagnas and their corresponding calorie counts.

#2 – Making Sense of Portion Sizes
Here’s another site that helps you to make good choices. Meals Matter is a website that has a wealth of information on nutrition, healthy living, meal planning, recipes, creating a cookbook, and personal fitness planning. I read an article called Making Sense of Portions Sizes which has suggestions to help you remember portion sizes:

If you are confused when reading a food label, try relating the portion size of a serving to everyday items. It is an easy way to visualize what a true portion size looks like.
  • Woman’s fist or baseball—a serving of vegetables or fruit is about the size of your fist
  • A rounded handful—about one half cup cooked or raw veggies or cut fruit, a piece of fruit, or ½ cup of cooked rice or pasta – this is a good measure for a snack serving, such as chips or pretzels
  • Deck of cards—a serving of meat, fish or poultry or the palm of your hand (don’t count your fingers!) – for example, one chicken breast, ¼ pound hamburger patty or a medium pork chop
  • Golf ball or large egg—one quarter cup of dried fruit or nuts
  • Tennis ball—about one half cup of ice cream
  • Computer mouse—about the size of a small baked potato
  • Compact disc—about the size of one serving of pancake or small waffle
  • Thumb tip—about one teaspoon of peanut butter
  • Six dice—a serving of cheese
  • Check book—a serving of fish (approximately 3 oz.)

#3 – Mattress Fit for a King
Do your bed sheets never seem to fit? My main issue is that when I am shopping for sheets, I can never remember which king-sized mattress I have. So here’s a little refresher course on mattress sizes for anyone who gets as confused as I do.

King = 76″ wide by 80″ long

California King = 72″ wide by 84″ long (narrower and longer)

Queen = 60″ wide by 80″ long

Full (double or standard) = 54″ wide by 75″ long

Twin = 39″ wide by 75″ long

Okay, my mattress measures 72″ wide by 80″ long – so what size is that?

The only other thing I can say is that I took an Ambien that night to help me sleep and while I was downloading and color adjusting the photo, the Ambien kicked in!

#4 – Tips for Cleaning Silver
Note: These tips are for silver only and for silver items that have no stones.

Place jewelry in an aluminum pan. Cover items completely with baking soda. Pour boiling water over jewelry. Although you’d like to watch the process, it is better to not lean over the pan, since a chemical reaction is occurring! After five minutes, take items out and rinse with water. Dry. If items are severely tarnished, repeat the process.

If your silver items are larger, put aluminum foil in the bottom of your kitchen sink, shiny side up. Fill the sink with enough boiling water to cover the silver. Add a couple of tablespoons of baking soda. Stir. Place your silver pieces in the solution for about five minutes. Make sure each piece is touching the aluminum foil. After about five minutes, rinse off the silver and dry.

I typed in my city and a list of organizations in my area looking for volunteers came up.

#2 – A Beauty Tip
Instead of buying expensive facial scrubs, try reaching into your pantry instead. Here are a couple of ideas: Baking soda mixed in with your favorite facial cleanser acts as a physical exfoliant by removing dead skin cells. Whirl oatmeal flakes in your blender with a little baking soda and water and you got a great soothing scrub. Or mix together 1 cup of granulated sugar with a 1/2 cup of oil (preferably almond oil) for a gentle moisturizing exfoliant. Try one tonight!

#3 – A Nutrition Tip
Which do you enjoy more – a wedge of iceberg lettuce with blue cheese on it or a Caesar salad? Did you know that romaine lettuce is far more nutritious than iceberg? According to e-Cookbooks, romaine “has three times as much Vitamin C and six times as much Vitamin A.”

The holidays are creeping ever so close, but don’t panic! I’ve got a couple of thoughts and ideas for you.

#1 – Send E-Holiday Greetings
Last year in an effort to reduce the amount of paper goods going to landfills, I sent email Christmas greetings to 95% of my friends and family. Those that I didn’t have email addresses for received snail-mail versions. The email greetings had all the components of my usual holiday greeting – a family photo and a newsletter. For me the unexpected bonus of sending this type of correspondence was all of the spontaneous email replies from friends and family that I normally only heard from during our annual Christmas card exchange. No stamps and no addressing of envelopes are involved and no paper products go to landfill, but still all the best wishes of the holiday season are sent to those I care about. In my mind this is the best of both worlds.

#2 – Gift Idea
Do you have someone on your shopping list that spends a fair amount of time commuting to and from school or work? Consider giving this person a book on CD. My family has long been fans of listening to classics and thrillers while in riding in the car. When my kids were young they listened to cassette tapes of children’s classics such as Anne of the Green Gables, Hatchet, The Odyssey, and Lord of the Rings.

Along this line you can also give a subscription to Audible.com. Different subscription rates provide for different numbers of free downloads of books per month or per year. New book releases can be downloaded to your computer to be burned to a CD and/or downloaded to your iPod for listening. The cost is significantly lower than the cost of a new audio book.

#3 – Recipe for Bath Salts
What about treating a friend or yourself to a spa treatment, but at home? Homemade bath salts are easy to make! Put 3 cups of Epsom salts in a large glass bowl or large glass jar. In a smaller glass container mix together 1 tablespoon of glycerin, a few drops of food coloring, and enough essential oil to attain the desired intensity of fragrance. Add the perfumed liquid mixture into the salt crystals and mix thoroughly. This mixture should be stored in a glass container with a lid. Make a tag or label describing the contents of the jar and directions for its use (add 3 heaping tablespoons to your bath). Some recipes for bath salts also include a quarter cup of sea salt and/or a couple of tablespoons of baking soda.

#4 – A Healthy Gift Idea
For seven years I have subscribed to the Nutrition Action Healthletter which is published 10 times a year by the Center for Science in the Public Interest or CSPI for the nominal fee of $24. Packed in roughly 20 pages are easily understood articles on diet, health and food safety, latest updates on food and health supplements, columns on recent studies, and nutritional comparisons of products. The most recent issue featured articles titled Seven Facts You May Not Know About Exercise and What the Label Doesn’t Tell You. The knowledge gained from this periodical enables readers to make better and healthier life choices.

Sitting at the dinner table years ago, my meat-loving youngest son took one bite out of his taco and said, “Where’s the meat?” Trying to cut back on the amount of cholesterol-ladened meat I served my family, I had substituted a spicy Mexican lentil mix for the the ground beef in the taco. It must not have been too bad because he continued to eat his taco that night and many other nights throughout his eighteen years at home!

Being Asian, I’d grown up with little knowledge of lentils. My first exposure was at the home of an elementary school friend who had six or seven siblings and whose parents were both doctors. She’d invited me over for dinner and informed me that they were having lentil stew. The first spoonful of this unfamiliar food brought my senses to attention. The firm texture of the lentils juxtaposed against the softer textures of the carrots and the tomatoes, were battling for a place in my memory against the spicy, yet savory combination of flavors. The lentil stew was delicious and from that moment on I was hooked on lentils.

What my school friend’s parents knew was that lentils were inexpensive, enough so to easily feed their brood of kids, and that lentils were packed with nutrients. The Whole Foods website states, Not only do lentils help lower cholesterol, they are of special benefit in managing blood-sugar disorders since their high fiber content prevents blood sugar levels from rising rapidly after a meal. But this is far from all lentils have to offer. Lentils also provide good to excellent amounts of six important minerals, two B-vitamins, and protein-all with virtually no fat. The calorie cost of all this nutrition? Just 230 calories for a whole cup of cooked lentils. This tiny nutritional giant fills you up–not out.

Lentils are also protein rich. They lack only one protein, methionine. Adding grains, nuts, seeds, meat, dairy products, or eggs will provide a complete protein containing the nine essential amino acids. Often times in the fall and winter I pair up a hearty lentil soup with my homemade cornbread to ensure a protein-balanced meal. Making tacos also works because both the cornmeal from the tortillas and the shredded cheddar cheese add complimentary proteins to the lentils.

Here’s an easy recipe for Spicy Mexican Lentils:
2 cups lentils, rinsed and drained
4 cups water
One package dry taco mix

Combine the lentils with the water and bring to a boil, then simmer for 20 minutes or until lentils are tender. (Note: If you will be using the lentils in a recipe that requires addition cooking time, like a casserole, cook the lentils until they are tender but on the firmer side. Make sure your recipe has enough moisture, like a sauce, so that the lentils do not dry out during baking).

After the lentils are cooked, drain them, making sure to reserve the liquid.

Combine the lentils, taco mix and 1/2 cup of the reserved lentil liquid. Simmer for about 15 minutes. At this point you are ready to use this mixture in any of your favorite Mexican recipes that call for a ground beef base.

Your eyes may say “Where’s the meat?” but your taste buds won’t!
