#2 – Make a Photo Mosaic!
On last week’s Friday’s Fresh Five, I posted a link to a photo mosaic depicting Van Gogh’s Starry Night. This week you are just a couple of clicks away from making a photo mosaic of your own. It’s easy to do – just follow the few steps on the site (“Browse” and “create my Image Mosaic”). An added feature is that you can download your mosaic and print it. Create a frame-worthy piece of art for your mom for Mother’s Day!

#3 – How to Tie a Scarf
After working in women’s retail clothing for a couple of years, I realized that many women need assistance accessorizing their outfits. One of the easiest ways to accessorize is to use scarves. But herein lies a problem: most women’s knowledge of tying scarves is very limited. To the rescue is this site. It’s devoted to the many ways to tie all different types of scarves. #4 – Wrap It up

“What can I bring?” I asked my friend as we planned a surprise birthday party for another one of our friends. “Can you bring rice?” she said. “Sure, no problem!” I replied. After all, rice was an easy dish for this Asian gal to prepare. But then my friend added, “Can you bring cilantro and lime rice like they serve at Chipotle?” While trying to remember if I’d ever tasted Chipotle’s rice before, I uttered, “Ohhh, okay . . . !” My friend cheerfully said, “Great!” and I mumbled back, “Yeah, great . . . .” and headed off to find the nearest Chipotle restaurant.

That conversation began my quest for a cilantro and lime rice recipe. Luckily, I found several online and I diligently read through them all. After experimenting with a few recipes, I ultimately found one that needed only a few minor tweaks and that tasted really good. Wanting to simplify the recipe, I cooked the rice in my rice cooker instead of a saucepan and was delighted with the results!

The light and refreshing flavor combination of cilantro and lime just can’t be beat and makes this rice dish a perfect accompaniment for grilled meats and seafood. Particularly, it’s a great complement to any of your favorite Mexican entrees. Serve this easy rice dish at your upcoming Cinco de Mayo celebration and be prepared to share the recipe with your guests – you’ll be asked for it!

Cilantro and Lime Rice:
Adapted from a recipe by Rockin Robin

Ingredients:
1 tbsp olive oil
1 tbsp butter
1 cup basmati rice
1-1/2 cups chicken broth
2-3 cloves garlic, finely minced
2 + tbsp fresh lime juice
zest from one lime
1/2 cup cilantro, chopped
1 tsp salt

Directions:
1. Add the oil and butter in a saucepan and heat on low until butter has melted. Add the garlic and rice (uncooked) to the oil mixture and saute for two minutes over medium heat, stirring frequently and being careful that the garlic does not burn.

2. In a mixing bowl stir to combine the chicken broth, salt, and lime juice.

3. Transfer the rice mixture to a rice cooker (or leave in the saucepan if not using a rice cooker). Add broth mixture to the rice. Cover and cook. (If not cooking a rice cooker, bring rice and broth to a boil, then cover saucepan and cook over low heat until done.)

3. When rice is cooked, add the lime zest and chopped cilantro and stir gently to mix. Serve immediately.

Serves 4.

Linnell’s Notes:
1. It is easiest to use a rice cooker – both to cook and keep the rice warm. No worries, though, if you don’t have a rice cooker, this delicious rice can be made in a saucepan. See above instructions.

2. I rarely add the full teaspoon of salt that is called for in the recipe. Depending on the sodium level of your chicken broth, you may need to adjust the amount of salt you add. I use low-sodium chicken broth and find that 1/2 teaspoon is enough for my taste buds even when I make a double batch.

2. After adding the lime zest and the chopped cilantro to the rice, taste and then adjust the seasonings. I often add more lime juice at this point and most of the time will not add the full amount of cilantro.

3. It’s better to add the zest and the cilantro as close to serving time as possible, so that their colors remain vivid and fresh – inevitably their colors will darken as they heat up.

Unwrapping a tied-dyed egg is a little like opening a present – you don’t know what you’re going to get! This fun technique for dyeing eggs uses men’s silk ties as the color source, so these eggs are truly TIE-dyed! If the men in your life will not relinquish any of their ties for this project, just purchase some at your nearest thrift store. I found this technique on Mommy Knows and thought – of course a clever mom would know about this no-mess technique for dyeing Easter eggs! This is a great project for all ages!

TIE-DYED EGGS
Components:
100% silk ties
Scissors
String or dental floss
Saucepan
Water
Vinegar

Directions:
1. Collect old ties and with a pair of scissors, cut open the back seams of the ties.

2. Cut out the triangular pieces of decorative lining and discard.

3. Cut out the white lining and save.

4. Cut out a piece of fabric large enough to wrap around the egg, wet it, wrap it around the egg, and gather it at the top. Tie top with string.

5. To keep fabric in close contact with the egg shell, wrap string all around the egg.

6. Cut a piece of the white lining fabric and wrap the egg in it and then tie it with string.

7. Put the eggs in a pot of cold water and 1/4 cup vinegar and then cook for 20 minutes.

8. After eggs cool, enjoy unwrapping your creations!

Linnell’s Notes:
1. A good looking tie does not necessarily translate to a good looking egg and, likewise, an ugly tie does not make an ugly egg.
2. I found that the less traditionally-patterned Jerry Garcia ties are great for this project.
3. Pale-colored ties did not turn out as well.
4. I cooked the pale-colored fabrics in a separate pot from the strong-colored fabrics, so the color would not transfer.
5. I didn’t have time to experiment, but the original instructions suggested wrapping strips of fabric around the eggs to create different effects.

It all started with burning the cookies – then the day proceeded to deteriorate rapidly. Somehow the parchment paper on the cookie sheet caught on fire, which set off the smoke alarm. In an effort to get relief from the loud, high-pitched shrieks coming from the alarm, my freaked-out dog tore out of the house, ripping through the family room screen door in the process! To make matters worse, once outside he spied a squirrel sitting on the bird feeder and decided to give it chase. I had no choice but to leave my smokey house and chase after my four-legged friend. Breathless and without shoes, I found my dog a block away and hauled him back home – just in time to see a fire truck pulling away! As I climbed up my driveway I saw a note taped to my front door which was curiously wide open. The note read: April Fools! None of the incidents you just read about actually occurred (thank goodness!) as they were just a product of my over active April Fool’s Day imagination! Happy April Fool’s Day!

#1 – Extraordinary Things
This is not a matter of imagination. People who believe in miracles see them all the time. Others are blind to the many special or extraordinary moments that fill their everyday lives. Reading 40 Extraordinary Things Happening Right Now reminds the reader that everyday occurrences are really small miracles, that these moments need to be appreciated, and suggests that the potential of mankind is in the small things we do everyday.

#2 – Tennis, Anyone?
I’m the only one in my family who doesn’t play tennis. Well, that’s not completely true – lately I’ve been practicing my tennis skills at my desk! Sometimes when I need a short breather from the computer, I play a quick game of tennis. Beating the computer is my goal, so I practice keeping my eye on the ball and calculating the angles of the bounce! With the crowd cheering me on, how could I lose? Tennis, anyone?

#3 – Reuse It!
The next time you go out for a scoop of gelato, don’t throw away the colorful plastic cup it was served in – reuse it! I find these small cups make perfect scoops for dog food, bird seed, flour, rice, and so on. Not only are they a good size to use for scoops, they are also durable and cute!

#4 – Salt Warning
After eating a sodium-heavy meal, I can usually see the effects on my body the next day: the scale reports a 1-2 pound gain; the pants won’t button; the wedding ring won’t come off. But what I can’t see is even more disturbing. From the latest issue of Nutrition Action Newsletter, published by the Center for Science in the Public Interest, come these scary tidbits of information:

“A high-salt meal can stiffen your arteries within 30 minutes. Arteries that lose their ability to expand when they need to can increase the risk of high blood pressure, heart attack, stroke, and cognitive decline.”

In the same issue, but in a different article, the nutritional breakdown for a Wendy’s Baconator Double and a Burger King’s Triple Whopper with Cheese is mentioned. With 1,590 mg and 1,550 mg of sodium, respectively, these burgers provide a full day’s supply of sodium in just one sandwich. Like I always tell my kids, “Choose wisely!”

Sometimes it pays to save old magazines. From an old Sunset Magazine, dated February 1997, comes this quick to make Red Pepper-Tomato Soup that’s perfect for a cold and wet Valentine’s Day. Many aspects of this recipe make it appealing. First, it is low in calories, fat, and carbohydrates. The amount of cholesterol is negligible, especially if you use vegetable stock and do not add any cream garnish. It’s a smooth and thick soup, much like a cream-based soup, but happily without the cream. Second, this recipe requires few ingredients and most of the ingredients are pantry staples. Third, both the red peppers and tomatoes are good sources of lycopene. According to Livestrong.com, Lycopene is an antioxidant molecule found in red-colored fruits and vegetables such as tomatoes. A number of studies have shown that diets rich in tomato products can lower the incidence of several cancers as well as heart disease, possibly due to their high lycopene content. The chemical structure of lycopene gives it a number of antioxidant properties that may in theory help prevent cellular damage and fight off some of the effects of aging and chronic disease.

Show your special someone how much you care by serving them this attractive, heart-healthy, red soup. It’s up to you whether or not you want to add the cream garnish, but you’ll really want the heart-shaped croutons to soak up all that hearty goodness!

Red Pepper-Tomato Soup
Recipe from Laura Sabo for Sunset Magazine

Ingredients:
2 or 3 slices French Bread, each about 1/2-inch thick
1 tablespoon olive oil
3/4 teaspoon dried basil
1/4 cup (about 1-1/2 oz.) chopped shallots
1 can (14-1/2 oz.) reduced-sodium chicken or vegetable broth
1 cup canned peeled roasted red peppers, rinsed and drained
1 can (16 oz.) tomatoes
Salt and pepper
Sugar
2 tablespoons sour cream or whipping cream (optional)

Directions:
1. With a heart-shaped cookie cutter or a knife, cut heart shapes (3 inches wide or smaller) out of bread. Lay croutons on a baking sheet and brush tops with about 2 teaspoons oil. Sprinkle evenly with 1/4 teaspoon basil. Bake in 350 degree oven
until golden and crisp, about 15 minutes for a 3-inch-wide heart.

2. Meanwhile, in a 2 or 3-quart pan, cook shallots, stirring often, in remaining 1 teaspoon oil over medium-high heat until shallots are translucent, about 3 minutes. Add broth, red peppers, tomatoes and their juice, and remaining 1/2 teaspoon basil. Bring to a boil over high heat; cover and simmer over low heat 5 to 10 minutes.

3. With slotted spoon, ladle peppers, tomatoes, and shallots into a blender or food processor; whirl until smooth. Return puree to pan; stir into liquid. Add salt, pepper, and sugar to taste. Ladle soup into bowls. Spoon dollops of sour cream decoratively over soup; swirl with the tip of a knife through sour cream. Immediately before serving, set heart-shaped croutons on top.

Makes 4 cups (2-3 servings)

Linnell’s Notes:
1. I used a 12-ounce jar of roasted red peppers. After rinsing and draining, the amount of red peppers came to just a tad over one cup.

2. Although the recipe called for a 16-ounce can of tomatoes, I only had a 28-ounce can available. I threw the whole amount into the pot figuring it couldn’t hurt – plus what was I going to do with the few remaining canned tomatoes?

3. I started with 1/2 teaspoon of salt and found that was enough for my low-sodium taste buds. I added about 1/2 teaspoon to 1 teaspoon of sugar – this amount will depend on the sweetness of the tomatoes you are using.

4. The dollops of sour cream sank to the bottom of the bowl, so I used heavy cream instead and dragged a toothpick through them to create the “almost” heart-shaped swirls.

The sun bathes my skin in warmth as I tend to the rose bushes in my garden. The hard work of pruning is finished, but I am far from done with my work. To receive gifts of magnificent blooms, such as the heavenly one in the photo taken last year, the bushes need a little more TLC. What living thing on this earth does not benefit from a little extra love?

#1 – How do I love thee? Let me count the ways.
Instead of buying Valentine’s Day cards at the grocery store, try doing this for each special person in your life. In your own imperfect handwriting, make a list of all the reasons you love him/her. At the top of your paper write Twenty Reasons Why I Love You and begin your list. Obviously 20 is just a number used as an example. Don’t stop at 20 if you have more reasons why you love this person. Think about what this person does that makes you smile or laugh. Consider the ways this person allows you to be yourself. Write down how you feel when you are around this person. What does this person bring to your life? You get my drift. What better Valentine’s Day gift than telling your special people what is truly in your heart!

#2 – Kiss Me Pink
Like to sip on cocktails, but, for whatever reason, don’t want the alcohol? DrinkAlternatives.Com has a list of Non-Alcoholic Mocktails Recipes that you’ll want to check out. Here’s a recipe from the list that would be perfect for a Valentine’s Day brunch:

Kiss Me Pink Mocktail
Ingredients:
* 1/4 cup sparkling cider
* 1/4 cup cranberry juice
* 1/4 cup pineapple juice
* whipped cream

Recipe: Mix sparkling cider with pineapple and cranberry juice. Top with whipped cream.

Garnish: Add a small lime slice and a maraschino cherry on top.

Serve: Champagne flute

#3 – Best Movies to Watch on Valentine’s Day

“How hard can it be to make them?” I wondered to myself after discovering how much fizzy bath bombs cost at a major cosmetic store. Having been spoiled by my children, who know how calming a good soak can be for their mom, I’ve enjoyed a nice supply of fizzy bombs up until now. With Mother’s Day too many months away to receive my next gift of bombs and with my increasing need for “Calgon, take me away” moments, I went in search of those round, water-softening, delightfully aromatic bath bombs! As I stood in the middle of the store and looked at the different prices, I saw money going down the drain. At $4.00 to $7.00 dollars a bomb and at one bomb per bath, it’s a splurge for someone who likes to indulge in baths! At that moment, I decided to try making my own fizzy bath bombs.

There are many sites on the internet that have step-by-step instructions for making bath bombs. I studied several of them, selected one, and went out and bought the necessary supplies. Because I make my own bath salts, I already had baking soda and essential oils on hand. Although it was an easy process and my first batch turned out reasonably well, I still want to experiment with different molds and ingredients and I’ll definitely try to perfect my technique.

Bath bombs make great gifts. Just pop one into a clear cellophane bag and tie it up with a cute bit of ribbon. Think ahead to Valentine’s Day or Mother’s Day. You are only limited by your imagination! Egg-shaped ones would make cute Easter treats. Heart molds could be used for Valentine’s Day or bridal showers. And If secret messages are your thing, Martha Stewart has a page of Valentine-appropriate messages and labels available on her site.

How to Make Fizzy Bath Bombs

Materials:
1-1/2 cups baking soda
1/2 cup powdered citric acid
2 tsp. sweet almond oil
6 to 8 drops essential oils of your choice
Food coloring
Large mixing bowl
Small mixing bowl
Candy or soap molds with rounded corners
Witch hazel in a spritzer bottle

Instructions:
1. Sift together the baking soda and citric acid in a large mixing bowl. (Make sure the bowl is completely dry before you begin.) Blend the mixture thoroughly, or the fizzy bomb will be too grainy.

2. Mix the sweet almond oil, essential oil and food coloring in a small bowl.

3. Stir the oil mixture into the larger bowl of baking powder and citric acid, and then mix it quickly with your fingertips. Speed is important, because if you mix too slowly, the mixture can begin to fizz.

4. Rub a bit of sweet almond oil on the inside of the molds, and then fill the molds with the mixture, packing them tightly with your fingers.

5. Let the fizzy bath bombs set for about 36 hours, then tap the molds lightly and gently remove the fizzy bath bombs.

6. Spritz the fizzy bath bombs with the witch hazel, which will help create a firmer outside cover. Allow the bombs to dry for 24 hours, turn over and spritz the other sides.

Linnell’s Notes:
1. Essential oils can usually be purchased at natural food stores.

2. Citric acid is necessary to create the fizzing effect. It can be purchased at wine or beer brewing supply stores, select health food or natural food stores, or online.

3. I purchased plastic Christmas ornament ball molds at my local craft store.

4. Do not forget to oil the interior of the molds for easier release.

5. I wore disposable gloves, so that my hands would not become stained by the food coloring.

6. This recipe made two medium-sized (80mm) balls.

Me: My Super G-O-A-L party.
I figure I’ll get a lot of things done today while you’re glued to the T.V.
He: Okay, but why the fancy food?
Me: Why should Super Bowl fans be the only ones over-indulging?
He: Are you gonna share?
Me: Only if you help!

I’m not a big football fan and I make no apologies for it. Since I did not plan to watch the big game with my hubby, I figured I could get some things done around the house and then sneak in some R & R (reading and recipe research). Super Bowl Sunday is synonymous with big time snacking, so my “Super Goal” party deserved to have some snacks, too. But for me no ordinary chip and dip snack would do . . . I needed something special . . . and then I remembered a recipe for Crab and Chive Puffs! So for our Super Day, my husband and I made these easy and tasty treats!

Crab and Chive Puffs
From Real Simple

Ingredients:
2 sheets frozen puff pastry (17.3 ounce box), thawed
4 ounces cream cheese, room temperature
1/2 cup mayonnaise
1/4 cup chopped fresh chives, more for garnish
1 tablespoon fresh lemon juice
Kosher salt and black pepper
1 pound lump crabmeat

Directions:
1. Heat oven to 400 degrees F.

2. Using a 2-inch cookie cutter, cut the pastry into rounds. Place on 2 parchment-lined baking sheets.

3. In a medium bowl, mix together the cream cheese, mayonnaise, chives, lemon juice, 1/2 teaspoon salt and 1/4 teaspoon pepper. Fold in the crab.

4. Dividing evenly, spoon the crab mixture onto the pastry rounds (about 2 teaspoons each).

6. Bake, rotating the baking sheets halfway through, until the pastries are golden and crisp, 20-25 minutes. Sprinkle with more chives, if desired. Serve hot.

Makes approximately 20.

Linnell’s Notes:
This recipe lends itself easily to variations. After step 3, I divided the crabmeat mixture into two parts. To one part, I mixed in a little curry powder. The other part was left as is. I proceeded to spoon the mixtures onto the pastry rounds as directed and baked according to directions. My favorite food taster liked the ones with a hint of curry better.

Even though the recipe is called Crab and Chive Puffs, I used green onions for the crabmeat mixture and used chives only for the garnish. The green onions I used were slender ones and not the wide, fat, almost-leek-like ones that are sold at some grocery stores!

Seeing red? The month of February brings this powerful color to the forefront. The Chinese Year of the Rabbit hopped in this week bringing with it an abundance of red. Red is a color of happiness and prosperity in China and is used to attract good luck. Red firecrackers and red lucky envelopes abound. But February also takes a romantic turn as we think of cupids and love. Valentine’s Day is just ten days away and soon we’ll be deluged with red hearts, cupids and candies! And speaking of red hearts . . .

#1 – Wear Something Red Today!
Today is the Go Red for Women “Wear Red” Day. Go Red is the American Heart Association’s campaign that “celebrates the energy, passion, and power we have as women to band together to wipe out heart disease and stroke.” Heart disease is the number one killer of women. To learn more about the warning signs of heart attack, stroke and cardiac arrest click here.

Wear something red today – a red scarf, a red flower, a red pair of shoes,  a red whatever – to proudly show your support for women’s heart disease awareness!

#2 – Carrying Aspirin?
For Christmas my sister gave me a pill tote that attaches to a key chain. The intention is to have aspirin readily available in case of a heart attack. The card that accompanied it states, “Chewing at least two (81mg) baby aspirin or one regular-strength (325 mg) aspirin at the first sign of a suspected heart attack can help save your life.” To verify the validity of the statement and the dose, please consult your doctor.

Have you ever wondered what the view is like from the top of Mt. Everest? Thanks to some of the best 360 virtual reality panoramic photographers in the world, you can enjoy this view and others, too! At panoramas.dk you can see the breathtaking panoramic view at the summit of Mt. Everest, as well as, many other locations and events such as New Years in Times Squares, Carnival in Rio, or paragliding over France. I highly recommend watching it in fullscreen mode and if you’re prone to motion sickness, take a Dramamine first!

Most of us have memories of particular foods that, when eaten again, take us back to a specific moment or time in our lives. Being transported to a memory, good or bad, by a single taste is what French novelist Marcel Proust wrote about in Remembrance of Things Past. For him it was a madeleine, a sponge cake baked in a shell-shaped mold, that brought his past to the present. A “foodie” like me has many food memory “triggers,” but in honor of Chinese New Year, let me share some of my Chinese cookie memories.

Little pig-shaped cookies are my “madeleines.” Eating these hard-baked, dry cookies, sold only during fall harvest, always reminds me of my childhood. Although I have not eaten one of these cookies in a very long time, just the thought of them makes me happy and transports me back to the streets of Chinatown. If I was lucky, my parents would buy me one of these cookies while I tagged along with them on their Chinese grocery shopping trips. Sometimes I would get the large Buddha-shaped cookie that had colored sprinkles scattered across his belly, but my favorite one was always the little pig-shaped cookie sold in a little plastic basket. Breaking off small bits and savoring each little bite until it was gone was the only way I could eat it.

Another cookie that transports me to my past is the Chinese Almond Cookie. I remember friends of my parents would come to visit and bring large boxes of these. They made a crumbly mess when eaten, but boy were they good! Sometimes I would pick off the almond and eat it first, so that it would not interfere with the enjoyment of the best part – the crunchy, almond-flavored cookie!

Here’s a recipe for Chinese Almond Cookies that are thin and light; they’re crisp on the outside and slightly chewy on the inside and have a wonderful almond flavor.

Chinese Almond Cookies

Ingredients:
1-3/4 cups all-purpose flour
1 cup plus 2 tablespoons sugar
1/2 teaspoon baking soda
1-1/4 cups almond flour
1 cup unsalted butter, cut into 1/2-inch cubes and chilled
1/2 teaspoon salt
1 large egg
1 teaspoon almond extract
1/2 cup slivered almonds
1 large egg white, beaten

Directions:
1. Sift together the flour, sugar, and baking soda and set aside.

2. Put the almond flour, butter, and salt into the bowl of an electric mixer fitted with the paddle attachment and beat on medium speed until the mixture resembles cornmeal, about 3 minutes. With the machine running, add the egg and almond extract and mix until well incorporated. Turn the speed to low and add the flour mixture. Mix just until no traces of flour remain.

3. Transfer the dough to a large sheet of plastic wrap, flatten into a 1-inch-thick disk, and wrap tightly in the plastic. Refrigerate until hard, at least 30 minutes or up to 3 days.

4. When ready to bake, preheat the oven to 325 degrees F. Line two baking sheets with parchment paper.

5. Form the dough into 1/2-inch balls and put 1 inch apart on the baking sheets. Use the palm of your hand to press balls into 1-inch circles. Press 4 slivered almonds into each cookie arranging them decoratively to form an X. Brush the tops of the cookies with the egg white.

6. Bake the cookies until golden and crisp around the edges, about 15 minutes. Cool completely on the baking sheets on a cooling rack. The cookies can be stored in an airtight container for up to 3 days.

Makes 3 dozen cookies.

Linnell’s Notes:
1. Almond flour can usually be found either in the baking aisle or the health food section of your grocery store.

2. In step 5 it helps to wet your palms with a little bit of water first before pressing down on the dough balls. The water prevents the buttery dough from sticking to your hands. Also, the 1-inch circles were too small to press four pieces of slivered almonds into an X-formation. I only used two pieces per cookie, but if you like your cookies to be nuttier, use more!

3. For me this recipe made way more than the three dozen it specified. I counted 88 cookies in my batch! Double 8 – how lucky!
